Gow Gee Silverbeet & Ricotta Ravioli

Ingredients

500 g ricotta cheese

1/4 cup grated parmesan

1 egg lightly beaten

salt and pepper

1/2 a bunch of sliverbeet leaves, finely chopped (you can make this as green as you like)

Gow gee pastry rounds

Method

In a large bowl combine ricotta, parmesan, lightly beaten egg, and salt and pepper

Add chopped silverbeet and mix to combine well

Using two gow gee wrappers place a teaspoon of the mixture in the centre of the first one, brush the edges with water and top with the second gow gee pastry round, repeat until all the mixture is used up

Cook in a boiling salter water until the ravioli float to the surf and serve with your favourite pasta sauce, mine is a pink sauce
