Beetroot kwas ingredients
3-4 medium sized beetroots – organic if possible
Jar that takes about 680 mls of water (approx measurements)
1/2 tsp of salt
1/2 tsp sugar
1/4 cup sauerkraut juice
680 mls of filtered water, boiled and cooled down
Wash and peel your beetroot and slice into medium pieces
Place the beetroot pieces into you jar, add salt, sugar, sauerkraut juice and fill the jar with the cooled water.
Cover the jar with cheese cloth, allow to stand in a warm place for 2-3 days, at this point, strain the beetroots, bottle the kwas and enjoy daily in the morning.
Your beetroot kwas should have an earthy, sour like taste to it. If it smells exceptionally bad then discard and starts again.
