Gooey Dark Chocolate Brownies

Ingredients

200 g good quality dark chocolate

200 g salted butter

3 eggs

2 egg whites

220 g caster sugar

115 g plain flour

40 g cocoa powder

Method

  1. Preheat oven to 160ºC.
  2. Melt butter and chocolate over a water bath. Ensure that the bowl does not touch the water otherwise your chocolate will turn grainy and solid. Allow chocolate mixture to cool down.
  3. Whisk eggs with egg whites until pale and fluffy.
  4. Add egg the egg mixture to the cooled chocolate mixture.
  5. Sift flour and cocoa powder and add sugar. Fold in the chocolate mixture however do not over mix.
  6. Bake for 45 minutes for soft gooey brownies
