Recipe type: Finger Food
Cuisine: modern
Serves: 1 cup
Ingredients
Flat bread, souvlaki bread or thin pizza bread
parmesan cheese (optional)
2 tins of sardines
50g cream cheese
1 small gherkin, chopped
2 tsp capers, roughly chopped
1 tsp mayonaise
3 springs of greek oregano (use any herb you have available)
squeeze ½ lemon juice
1 tsp aleppo pepper flakes
salt and pepper to taste
Method
Pre heat oven to 180°C / 350°F
Using a Christmas cookie cutter press out as many dippers as you need. Line them on a tray and sprinkle with parmesan cheese. This part is a little fiddly as you want to make sure there isn’t any cheese falling off the shapes.
Place in the pre heated oven and cook for 10 minutes at first. Keep checking on them at 5-10 minute intervals to make sure they aren’t burning.
Remove from the oven and leave to cool.
In a bowl combine the rest of the ingredients and stir till well combined.
Keep chilled till ready to serve.
