 Pork & Prawn Stir Fry w/ Zucchini Noodles & Sweet Potato Sticks

Ingredients

6 large prawns, butterflied

200g pork mince

1 shallot, finely chopped on an angle

2 cloves garlic, minced

2 lebanese eggplants, diced

3 zucchinis, made into spaghetti

handful green beans, thinly sliced

small sweet potato, shredded

50g vermicelli

1 chilli, finely chopped

1 tsp brown sugar

1 tbs fish sauce

1 lime, juiced

handful coriander leaves, roughly chopped

Oil for frying

Method

Prepare the vermicelli by breaking into small pieces and frying quickly in hot oil and placing on paper towel to drain. Set aside.

Peel and shred the sweet potato and place into the oil oil. Cook for about 1 minute or till golden. Drain on paper towel and set aside.

Get the rest of your ingredients ready – make your zucchini into noodles, dice the eggplant, slice the beans, chop the chilli, thinly slice the shallots and mice the garlic.

Heat some oil in a pan and add the shallots, cooking for 1 minute. Add the garlic, chilli and beans and cook for 1 minute.

Add the eggplant and pork and cook till pork is browned.

Add the prawns and stir in the sugar and fish sauce. Cook for 2 minutes or till prawns are done.

Throw in the zucchini noodles and coriander and heat through.

Serve with the vermicelli noodles on the bottom, pile on the stir fry and drizzle over the juiced lime, then top with the sweet potato sticks… enjoy!
