Grilled Turmeric & Oregano Chicken w/ Green Goddess Dressing

Grilled Turmeric & Oregano Chicken w/ Green Goddess Dressing came about after deciding I needed to clean out the fridge. Since son and I are heading to Canberra tomorrow for several days I needed to get through the bag of delicious herbs I got from mum’s garden and also prep some food for hubby to have (he can make a couple of dishes, will survive on a big man salad but that’s it for kitchen ability).
Stunning zingy and earthy flavours with the ability to make numerous different dishes from these two elements means you could make this at the beginning of the week and then use the leftovers in another, completely different meal.
Tonight’s dinner will be a Chicken Gyros type meal with some flat bread and salads together with this chicken and dressing. Leftover chicken and dressing will be made into a big salad for hubby’s lunch… easy!

Marinade

500g chicken – use tenderlion, breast or thighs, cut into large strips

3 large garlic cloves, minced

1/2 lemon, juiced

1 tbsp oil

1/4 cup Greek yoghurt

1 tsp ground turmeric

1½ tbsp dried oregano

1/2 tsp sweet paprika

1/2 tsp ground cumin

1 tsp salt

1 tsp black pepper

Finding Feasts - Green Goddess Dressing

Green Goddess Dressing

2 garlic cloves, minced – If you have roasted garlic then use that preferably

2 spring onions, white and green part

1/2 lemon, juiced

3 anchovy fillets

1 cup Greek yoghurt

1/4 cup mayonnaise

2 tbsp sweet chili sauce – this is entirely optional. I was just craving something hot a sweet at the same time as making this dressing.

Large handful of fresh herbs – basil (some thai basil thrown in adds a lovely flavour), parsley, chives, dill etc … if it’s green, throw it in.

1 tsp salt

1 tsp black pepper

Method

Marinade

Throw all the ingredients into a bowl and stir to combine.

Place the marinade and chicken in a bowl and leave to marinate for 30 minutes.

When ready, pre heat a girdle and then cook the chicken in batches. Set aside till ready to eat.

Dressing

Place all the ingredients into a food processor and blitz till nicely combined.

Have a taste and see if you need more sour or sweetness or salt and then refrigerate till needed.

How to serve…

From this point you can either make a big salad with things like roasted sweet potato/pumpkin, avocados, tomatoes, corn etc and then drizzle over the dressing.

or

Heat some flat bread and then make some delicious gyros with a cucumber and red onion salad, the grilled chicken and drizzled with the dressing and avocado cubes.

… I’m sure you will come up with something amazing starting with these two scrumptious elements.
