Easy Flat Bread Recipe

A wonderful addition to any curry is the flaky flat bread that you use to sop up the sauce. This recipe is a quick version that works beautifully, especially if you roll it out nice and thin so you get the thin crispy, nicely tarnished bits on it. You can also make flavoured butters to brush over the cooked bread, such as garlic or coriander melted butter.

Ingredients
  • 300g plain flour
  • ½ tsp salt
  • 50g butter
  • 185ml milk
  • oil or ghee for cooking
Method
  1. Combine the milk and butter in a bowl (if using a microwave) or saucepan and heat till the butter has melted.
  2. Place the flour and salt into a bowl then pour in the milk mixture. Mix together and then tip out onto a floured bench. Knead for a minute or two and place in a covered bowl for 30 minutes.
  3. When ready to cook, remove from the bowl and divide the dough into 4 equal pieces.
  4. Roll out one piece so it’s nice and thin. The thinner it is the flakier it will be. The thicker it is the chewier it will be, which is great for gyros (just cook longer and on a lower heat).
  5. Heat 1 teaspoon of oil or ghee in a pan till hot and then place in your dough round. It will puff in areas, darkening appropriately in those spots. Flip and cook the other side.
  6. Repeat with the remaining dough segments.
  7. Enjoy with any sort of curry.
