Chunky Oat Raisin Cookies - Who can resist a cookie, especially a large cinnamon and nutmeg scented one with sweet raisins dotted throughout?

Ingredients
  • 2 cup plain flour
  • ½ tsp bicarbonate soda
  • ½ teaspoon salt
  • ¼ tsp freshly grated nutmeg
  • 1 tsp cinnamon
  • 170 g unsalted butter, melted
  • 1 cup packed brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 1 tbs vanilla essence
  • 2 cups rolled oats
  • 1 cup raisins
Method
  1. Pre heat oven to 160°c / 320°f
  2. In a large bowl mix the flour, bi carb soda, salt, nutmeg and cinnamon. stir till well combined.
  3. In another bowl beat together the melted butter and both sugars for 1 minute.
  4. Slowly add the 2 eggs and the vanilla, beating till light airy – about 3 minutes.
  5. Add the butter mixture to the flour mixture and quickly fold in till just combined.
  6. Add the oats and the raisins and mix till just combined.
  7. Use a ¼ cup measuring cup to make large balls and place on a tray lined with baking paper.
  8. Cook for about 25 minutes and then enjoy.
  9. A nice idea is to place them in a flip top jar and hand out to neighbours or friends.
