Chunky Oat & Raisin Cookies

- 2 cup plain flour
- ½ tsp bicarbonate soda
- ½ teaspoon salt
- ¼ tsp freshly grated nutmeg
- 1 tsp cinnamon
- 170 g unsalted butter, melted
- 1 cup packed brown sugar
- ½ cup white sugar
- 2 eggs
- 1 tbs vanilla essence
- 2 cups rolled oats
- 1 cup raisins
- Pre heat oven to 160°c / 320°f
- In a large bowl mix the flour, bi carb soda, salt, nutmeg and cinnamon. stir till well combined.
- In another bowl beat together the melted butter and both sugars for 1 minute.
- Slowly add the 2 eggs and the vanilla, beating till light airy – about 3 minutes.
- Add the butter mixture to the flour mixture and quickly fold in till just combined.
- Add the oats and the raisins and mix till just combined.
- Use a ¼ cup measuring cup to make large balls and place on a tray lined with baking paper.
- Cook for about 25 minutes and then enjoy.
- A nice idea is to place them in a flip top jar and hand out to neighbours or friends.
