Naturally sweet with a gorgeous ‘pop’ from the chia seeds, these are a great snack to have on hand for a quick boost of energy or naughty indulgence without too much of the guilt.

Ingredients
  • 6 dates, pitted and roughly chopped
  • ½ cup sultanas
  • ½ cup sunflower seeds
  • ½ cup desiccated coconut, plus extra for rolling
  • 1 tbs chia seeds
  • 1 tbs honey
  • 1 tbs coconut oil
  • 1 tbs cacao or cocoa powder
Method
  1. Place all the ingredients into a food processor and blitz till combined and naturally clumps together.
  2. If you feel that it’s a bit dry and not clumping together add a teaspoon extra of coconut oil or honey.
  3. Roll heaped teaspoons of mixture into balls, pressing it together to make them quite solid.
  4. Roll balls into coconut and then place in the fridge for about an hour to firm up.
