Beef & Mushroom Meatloaf w/ Roasted Garlic

Ingredients
  • 1 kg beef mince
  • 1c finely chopped mushrooms
  • 1 carrot, grated
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 eggs
  • 1 tbsp french mustard
  • 3 tbsp tomato sauce
  • 1 tbsp Worcestershire sauce
  • ½ c dry breadcrumbs
  • 1 head of garlic
  • 1 tsp olive oil
  • pinch of salt
Method
  1. Pre heat oven to 180°C / 350°F
  2. Slice the top portion of the garlic so you can just see the cloves, place into a garlic roaster or mini cast iron pot and drizzle with the oil and sprinkle with salt. Place on lid and pop into the oven on a low shelf.
  3. Place the rest of the ingredients into a bowl and mix well with your hands. Once well incorporated then lightly press mixture into a loaf tin.
  4. Cook, uncovered, in oven for 30-40 mins or till cooked through. A meat thermometer will show as 65°C / 160°F. Remove and leave to rest for about 10 min before slicing.
  5. Remove the garlic and serve with the garlic on the side to squeeze over your sliced meatloaf.
