Taco and Fajita Seasoning - Big Batch is a beautiful blend of spices and herbs that is a must for your Tex-Mex style meals.

Ingredients
½ cup chilli powder (you could purchase this if you prefer or use the below recipe)
  • ¼ cup paprika
  • 1 tbs smoked paprika
  • 4tsp dried oregano
  • 2.5 tsp ground cumin
  • 2.5 garlic powder
  • 1.5 tsp onion powder
  • 2 - 5 tsp cayenne pepper - depending on heat intensity
The rest of the seasonings
  • 2.5 tsp garlic powder
  • 2.5 tsp onion powder
  • 2.5 tsp dried oregano
  • 2 tsp smoked paprika
  • 1 tsp ground coriander
  • 1 - 2 tsp cayenne pepper - or to taste
  • 3 tsp ground annatto (optional)
  • 4 tbs paprika
  • 4 tbs ground cumin
  • 2 tbs crushed sumac
  • 2 tbs tomato powder
  • 2 - 4 tsp salt (best to keep it a small amount as you can always add it to the dish later)
  • 3 tbs cornflour
Method
  1. Mix all the ingredients of the Chilli Powder and set aside.
  2. Mix all the other ingredients in a large jar and then measure out ½ cup of the Chilli Powder. Mix or shake till all the seasoning is completely combined.
  3. This will last for about 6 months after which it will start to lose it’s intensity and flavour.
How to use…
  1. Cook your meat or veggies and then add 2 tablespoons of seasoning the the pan with about ¼ to ½ a cup of water.
  2. If using shredded meat then make up the seasoning sauce first and bring to the boil before adding your already cooked meat.
