Basil Pesto with Cashew Nuts

One of the most useful sauces you can have is the Pesto Genovese. Use it as a dip or as a pasta sauce.

Ingredients
  • Large bunch of basil
  • 2 garlic cloves
  • ½ cup parmesan cheese
  • ¾ cup unsalted cashew nuts
  • ¼ - ½ cup rice bran oil - or similar neutral flavour oil
  • pinch of salt flakes
Method
  1. Wash the basil and remove the leaves from the stems.
  2. Place in a food processor.
  3. Add the nuts, garlic and cheese and blitz for a couple of seconds.
  4. Slowly drizzle in the oil till you get to the consistence you want.
  5. Add salt to taste.
