Basil Pesto with Cashew Nuts

Serves: 1.5 cups
- Large bunch of basil
- 2 garlic cloves
- ½ cup parmesan cheese
- ¾ cup unsalted cashew nuts
- ¼ - ½ cup rice bran oil - or similar neutral flavour oil
- pinch of salt flakes
- Wash the basil and remove the leaves from the stems.
- Place in a food processor.
- Add the nuts, garlic and cheese and blitz for a couple of seconds.
- Slowly drizzle in the oil till you get to the consistence you want.
- Add salt to taste.
