Pork Sticks w/ Spicy Cumin Salt aka Pork Scratchings

A deliciously moreish snack food that will be devoured in moments. Be sure to make lots of it.

Ingredients
  • 1 kg pork skin with at least 1cm of fat underneath
  • 1 tsp salt
Spice mix
  • 3 tsp salt
  • ½ tsp paprika
  • ½ tsp cumin seeds
  • ½ tsp fennel seeds
  • ¼ tsp caster sugar
Method
  1. Pre heat the oven to 220°C / 430°F
  2. Pat the skin dry and then slice into thin strips about 1.5cm wide. Score the strips – or score first and then cut the strips, whichever way works best for you.
  3. Place on a cooling tray that is sitting over a tray with fairly high sides to catch the fat. Sprinkle with 1 tsp of salt.
  4. Place in the hot oven and cook for about 25 minutes or till the skin has bubbled up and is crispy.
Be very careful when removing the pan out of the oven as it will have quite a bit of liquid fat in the base. Keep kids and animals out of the kitchen when doing so.
  1. Remove the pan from the oven and leave to cool.
  2. Make the Spicy Cumin Salt by dry roasting the fennel and cumin seeds and then slightly crushing them in a mortar. Mix in the paprika, salt and sugar and set aside.
  3. Serve with the Spiced Cumin Salt mix and a beer.
