White Chia Seed and Banana Bread

- 2 large bananas – very ripe
- 125g unsalted butter – room temperature
- 1 cup caster sugar – this can be reduced to personal taste
- 2 eggs
- 100ml buttermilk – recipe below if you are out of this ingredient
- 1 tsp vanilla essence
- 225g self raising flour – recipe below if you are out of this ingredient
- ¾ cup chia seeds – I used white
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp bicarbonate of soda
- 1 tbs white vinegar
- milk to make 1 cup with the vinegar in it.
- Leave to sit for 5 minutes and then use as buttermilk
- 225g plain flour = 1.8 cups
- 3 tsp baking powder
- ½ tsp salt
- stir to combine
- Pre heat oven 180°C / 360°F and grease a rectangular bread tin. Cut some baking paper to line the base and then set aside.
- Place the banana, butter, buttermilk, eggs, caster sugar and vanilla in to a food processor and process for 2 minutes.
- Add the flour, chia seeds, bicarbonate of soda, ginger and cinnamon and process till just combined.
- Pour this into your prepared bread tin and cook in the oven for 1 hour or till a skewer comes out clean.
