The Easiest Banana Bread Ever w/ Lemony Cream Cheese Frosting

- 2 large bananas – very ripe
- 125g unsalted butter – room temperature
- 1 cup caster sugar
- 2 eggs
- 100ml buttermilk
- 1 tsp vanilla essence
- 225g self raising flour
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp bicarbonate of soda
- 250g cream cheese
- 65g unsalted butter
- 2 tbs lemon juice
- 1 tsp vanilla essence
- 800g icing sugar mixture
- Pre heat oven 180°C / 360°F and grease a rectangular bread tin. Cut some baking paper to line the base and then set aside.
- Place the banana, butter, buttermilk, eggs, caster sugar and vanilla in to a food processor and process for about 2 minutes
- Add the flour, bicarbonate of soda, ginger and cinnamon and process till just combined.
- Pour this into your prepared bread tin and cook in the oven for 1 hour or till a skewer comes out clean.
- Leave to cool completely before topping with the cream cheese frosting.
- Makes about 4 cups but can be halved
- Freezes well
- Beat the cream cheese, butter, lemon juice and vanilla till smooth.
- Add half of the icing sugar and mix well.
- Add last half and mix well.
- Add more juice or icing sugar till you get the consistency you want.
