Christmas Fruit Mince Pies Using Egg Free Pastry

- 1 jar of Robertson’s Fruit Mince or similar
- 1.5 cups plain flour
- 125g unsalted butter, chopped
- ¼ cup icing sugar
- ½ tsp salt
- 1-2 tbs ice cold water
- Sift together the flour, icing sugar and salt
- Add the chopped butter
- Work the butter through the flour with a pastry mixer, this way the butter stays nice and cool.
- Very slowly add little dribbles of ice cold water to the mixture and combine, or press together till it starts to form a ball.
- Knead slightly to a flat disc shape and then place, covered in the fridge for 30 mins
- Pre heat the oven to 190°C / 375°F
- Lightly grease a tart tray.
- Roll out the pastry and then press into the tray.
- Spoon in a tablespoon or so of the fruit mince filling and then cover with your choice of lid.
- Brush the tops of the pies with either melted butter or a beaten egg and sprinkle with white sugar.
- Cook in the oven for 20-30 minutes or till the pastry is lightly browned.
- Serve warm or cold. They make fantastic gifts also.
