Smokey Paprika Hasselback Potatoes

Everyone loves a hasselback potato and now you can have them in half the time!

Ingredients
  • 4 potatoes (2 per person if you want to cook for more people)
  • ½ tsp smoked paprika
  • ½ tsp sweet paprika
  • 1 tsp salt
  • 1 tbs butter, melted
  • 1 tbs oil
Tools of the trade
  • diable potato baker
  • pastry brush
Method
  1. Pre heat to 220°C / 440°F
  2. Place the whole potatoes, skin on, into your diable potato baker and cook in the microwave for 4 minutes.
  3. Remove and pierce each potato with a skewer to see if they are done.
  4. Remove the ones that are tender and cook the other ones for a minute or two longer.
  5. If you don't have a diable then wrap each potato in paper towel and cook as above - after the initial 4 minutes, test and then cook in 1-2 minute increments till done - it's very easy to over cook potatoes in a microwave.
  6. Mix together both of the paprikas, salt, butter and oil and set aside
  7. Let the potatoes cool enough to handle and with a sharp knife cut slits about .5cm apart, making sure not to touch the bottom.
  8. Fan out the slices a little and then brush on and in between the slices the paprika mixture.
  9. Place into the hot oven for 15 - 20 minutes
