Roasted Pumpkin, Spinach, Feta & Ricotta Rolls – I love these so much that I make a big batch of them and freeze them for lunches. They work really well as a dinner also. Rather than cutting them in half or thirds, leave them the full size and serve with a crisp garden salad and a zingy dressing.

These veggie rolls are packed full of delicious clean and fresh flavours so you don’t need to add extra spices, but you can serve them with a variety of spicy chutneys and sauces to change it up if you choose.

Omenakakku – Mini Finnish Apple Cakes – Last weekend I found a bag of mixed apples in the fridge. Like a blank canvas the ideas started flowing. Maybe a crumble, crepes or a pie, I just couldn’t decide. Asking around I got strudel, apple sandwiches and crumble again. So many choices! Finally I decided to go back to my roots and whip up a Finnish Apple Cake.

The Finnish version doesn’t seem to be too different to a standard cake, maybe apart from the sour cream, but it certainly is a delicious treat and this particular recipe is now next to my Pulla recipe for sweet treat recipes to have on hand.

Overall, this isn’t an overly sweet dessert and the texture is soft, moist and dense without being too heavy.

Roasted Curry Cauliflower Fritters w/ Sriracha Mayo & Pomegranate – Happy solstice! Summer for the northern hemisphere, winter for us in the southern hemisphere. It’s the start of longer, warmer days. A celebration of making it to mid winter (although we are still waiting for winter here in Sydney).

So to celebrate the shortest day of the year, here is a fritter … sun like with it’s vibrant yellow, seeds to represent rebirth, served with baby beetroot and spinach leaves.

A few points of note, I used vadouvan curry mix, which is a french inspired curry blend but you could use any other blend that you like. I also added nutritional yeast (just slightly addicted to this at the moment) but you could just omit this or use parmesan cheese as a substitute.

Lots of spices that complement the sweetness of the roasted cauliflower, matched with the hot, creamy mayo and sweet and sour bursts of the pomegranate seeds, these fritters make a wonderful addition to a mid winter celebration.

Flaky, Cheesy Mushroom Puffs are perfect little mouthfuls of flaky pastry and creamy, savoury mushroom filling.

Although these were one of numerous canapés made specifically for my nana’s 90th Birthday party a couple of months ago; I will happily make finger food to freeze and serve with a glass of wine on the weekend or to reheat with a salad for lunch during the weekday.

These little morsels are sensational with their crispiness, creaminess and umami mushroom hit and most importantly can be eaten with one hand while you mingle and sip your way through the party.

When planning party food or canapés to serve to your guests, aim on having  about 8 per person. A mix of hot and cold foods that can be prepared ahead of time and simply assembled on the day.

These can be made and then frozen. When ready, place in a 200°c / 400°f oven and cook till golden and puffed.

Chunky Oat & Raisin Cookies … Who can resist a cookie, especially a large cinnamon and nutmeg scented one with sweet raisins dotted throughout? Certainly not me.

I don’t really have a sweet tooth and a mid morning snack is usually of the savoury kind but these have really been hitting the spot of late – a nice coffee and half of one of these cookies has been the perfect 11:00am breather.

A really nice idea is to keep some for yourself and then give the rest as gifts… maybe friends, your neighbour or your kid’s school teacher?

Smoked Salmon, Spinach & Feta Quiche – The only difference between a quiche and a frittata or a Spanish omelet is the use of a pastry base. I like to keep the sides of the pastry quite a bit higher to the inside mixture so there’s a crunchiness that goes so well the soft texture of the egg. Also, try making it in a square dish rather than a round one – it’s alot easier to serve up!

This is chunky and flavoursome and is a great partner to a crispy salad with a zingy dressing. It’s a moveable meal so great for picnics or taking over to a friends house. Served chilled and sliced into little squares makes this a delicious appetiser with drinks.

Stromboli aka Stuffed Bread – step by step… Like anyone, I really enjoy pizza, especially freshly made at home but sometimes you just want to mix it up a bit.

Stromboli is basically a pizza rolled up, not dissimilar to a Calzone or the Panzerotti, although the later is fried and they are both folded in half like a pocket rather than rolled like a loaf, which explains the ‘Stuffed Bread’ tag. The Stromboli is a fabulous way to eat pizza and is far more portable… great for picnics!
