Apple Galette aka The Easiest Apple Tart Ever is a recipe that you will use continuously from this point on … I promise!

A lot of people feel there is too much time and effort needed in making their own pastry, let alone a flaky pastry, but, being a rather lazy cook myself I know that this one will turn you into a pastry maker forever.

The pastry is done in a food processor in under 1 minute. It is then pressed into a ball and placed into the fridge till you are ready to roll it out and add the filling… See! So incredibly easy. You really can’t mess this pastry recipe up.

Once you’ve got the pastry, the filling combinations are endless; peach, berries, rhubarb, whatever.

If you want to make a savoury filling, say a mushroom galette, then omit the sugar and use half a whole wheat flour for added savouriness. Cook down the filling so as to not make the pastry soggy, making sure the filling is completely cold before placing on the pastry and cook for the 40 minutes or so.

Tip: cover the base of the rolled out pastry with a thinnish layer of flour that will absorb any excess liquid from your filling.

This is an amazingly simple recipe for an end result that is an incredible centrepiece.

Simple Indian Flat Bread – A wonderful addition to any curry is the flaky flat bread that you use to sop up all the delicious sauce.

This recipe is a quick version that works beautifully, especially if you roll it out nice and thin so you get the thin crispy, nicely tarnished bits on it.

You can also make flavoured butters to brush over the cooked bread, such as garlic or coriander melted butter.

This recipe can also be used for any recipe that requires a bread wrap such as gyros or falafel wraps.

Best Ever Slow Cooker Cinnamon Scrolls – Is there really anything better than warm, soft cinnamon rolls?

How do you eat them? Do you pull them apart revealing the lightly textured sweet bread, gently scented with cardamom. Then slowly unravel the curl to unveil the sweet, cinnamon sugar centre. Or do you bite straight into it getting a perfect mouthful of both soft bread with crusty sugar and a firm crust?

The benefit of making cinnamon buns in a slow cooker is that they stay so soft and although you don’t get a brown top you do get a beautifully browned base and sides.

Make these over the weekend so everyone can enjoy the warming spice and bread aromas that will waft through the house as they cook.

Stromboli aka Stuffed Bread – step by step… Like anyone, I really enjoy pizza, especially freshly made at home but sometimes you just want to mix it up a bit.

Stromboli is basically a pizza rolled up, not dissimilar to a Calzone or the Panzerotti, although the later is fried and they are both folded in half like a pocket rather than rolled like a loaf, which explains the ‘Stuffed Bread’ tag. The Stromboli is a fabulous way to eat pizza and is far more portable… great for picnics!

Best Ever Pizza Dough Recipe…This recipe comes straight from Hugh Fearnley-Whittingstall’s River Cottage Bread Handbook.

If you have never made pizza dough for yourself then you have to give this one a go. It lasts for a couple of weeks in the fridge, which is great for when making those spontaneous pizza’s after a night out or you can freeze the individual portions, just bring back to room temperature when a pizza is needed. It truly is fool proof. Not only is it a ‘best ever pizza dough’ it makes amazing Indian flat breads or roti canai or stuffed rolls such as Italian stromboli’s… I really should call this ‘Magical Bread Dough’

This recipe has never steered me wrong and comes out with a nice crust that doesn’t puff up too much. If you can, get a pizza stone as this will be the difference to having a soft crust or a nice crisp bottom. Pre heat your oven or BBQ for at least 15 minutes with the stone in, the oven and the stone need to be at the same temperature.

My son’s ultimate pizza is loaded with olives, hot sopressa salami, bacon and fresh basil. Husband’s is with salami, anchovies, and olives and mine would have to be a Tandoori Chicken with raita, cashews and fresh coriander – YUM!

Bread & Butter Pudding w/ Banana Bread

Bread & Butter Pudding w/ Banana Bread is a delicious way to use up leftover, stale banana bread… Upcycling food in a sense. This is the recipe that my son told me last night that I should use as my entry recipe to get onto Masterchef, so it must be good.

We all get to the point were we’ve had the bread out for days and it’s getting stale, it’s now too late to freeze as it will forever be stale banana bread that will need to be toasted (although that’s not too bad if you have the freezer space). So making it into a pudding will extend the life of the bread for a few more days – if it lasts that long.

There are no hard and fast rules to this fabulous recipe other than the egg and milk ratio for the custard, but even then you can add a bit more cream or add and egg yolk for extra richness. I prefer a firm custard to a wet one for these puddings.

The size of your pudding will be determined by the amount of banana bread you use. I had just under half a loaf left and it was perfect for a 22x15x6cm baking dish.

It’s delicious served warm with ice cream or a dollop of cream and if you were feeling so inclined to be decadent, a light drizzle of Salted Caramel Sauce will top it off nicely.
